Thanksgiving is coming!!!!


I'm so excited for Thanksgiving next week. It's my favorite non-religious holiday. Mostly because I love all the food of Thanksgiving, especially fried turkey! I can't wait until Aaron and I can host Thanksgiving in our future house. But, I will still be cooking this Thanksgiving. I am going to try a twist on two of my favorite desserts, it's Pecan Pumpkin Pie.






I hope it stays cold for Thanksgiving, it's finally starting to feel like the fall and Christmas coming. Aaron is planning on putting up the tree and start decorating tomorrow. We will see how that goes!

Birthdays and Dogs Love


So today is one of my last birthdays before birthdays no longer exist. I have had a really great day so far. I went with co-workers, clients and my step mom to a luncheon where John Grogan the writer of "Marley & Me" spook about his books and Marley his hyper and now famous Lab. He was a wonderful speaker and a really neat guy. His speech really made me think about dogs and how much we fall in love with them. It is amazing how much dogs can become a part of our life and become so special to us. Dog spelled backwards is God. I think dogs really show us Gods love, they have unconditional love for us and are always there for us when we need them. Which brings me to my little chunky monkey. Abby has been in my life for so long, I can't imagine life without her.

Destin Parasailing Adventure.....

Sorry so late. But these are pictures from our parasailing trip in Destin.

We where searching for a place to buy sunscreen because of course we forgot it on the most important day. The funny part is that we got caught in a thunderstorm about 20 minutes later and the boat had to return to the marina. So, we where rescheduled for an hour later. This time we went out on the boat with a different group of people. I am very afraid of heights and was supposed to be just a observer on the boat and would not be parasailing.


It was a very windy day and the boat was rocking like crazy they had to change the parachute three times and where fighting the wind. Aaron was suppose to be the last person to go up so a few people before him the crazy beach guy (in pic) came and tried to convince me to go up with Aaron because they needed the extra weight. I said no until he offered the single lady on the boat to go up with Aaron. Then I had to go up cause I didn't want a random girl in our honeymoon pictures.


So with much hesitation I did it and I actually liked it. It was scary at first but it was a great view. We where up about 10 minutes. Of course Aaron had to tell me while we where up that if the parachute snapped it would be like hitting concrete, typical Aaron comment it ruined the moment and made me scared again. So here are the pictures.

Sopapilla Cheesecake Recipe

Sorry it took so long to post this recipe that I promised everyone.

This is the recipe for the Sopapilla Cheesecake that I made at our rehearsal dinner. I got the original recipe from a wonderful cook. I since have experimented with it and added a few of my own touches to it. Enjoy!

Sopapilla Cheesecake
Ingredients
3 (8 ounce) packages cream cheese (Full fat only)
2 (8 ounce) packages refrigerated crescent dinner rolls
1 ½ cups sugar
1 teaspoon vanilla extract or almond extract
1 and ½ sticks of margarine or butter, melted

Directions
1. Using a 9 x 13 baking pan, unroll one package of refrigerated crescent rolls and line the bottom of the pan and Flatten.
2. Add a ½ stick of melted butter to top of cresent rolls and sprinkle with cinnamon to cover.
3. Mix together the cream cheese, 1 ½ cup of sugar and vanilla extract.
4. Spread over the crescent rolls.
5. Unroll the other can of crescent rolls and place on top of cream cheese mixture.
6. Pour one stick of melted butter or margarine over the top and sprinkle generously with sugar and cinnamon.

7. Bake at 350 degrees for 30 minutes or until golden brown.

We have made it to Destin.........



So we are now officially Mr and Mrs Capps and we are on our honeymoon. After driving 7 hours in the pouring rain we finally made it to Biloxi on Sunday. We stayed at the Beau Rivage; which was an experience for sure. Our room was on the 20th floor and the elevator would go from the 20th floor to the 1st floor in less then a minute, talk about equilibrium issues. But all and all it was good, I got to gamble for the first time and I am certainly not hooked on it.
Today, we drove the rest of the way to Destin and after getting lost we finally made it to our amazing condo. The balcony is on the beach and it's just perfect. We spent some time driving around the area and found two areas that look identical to The Woodlands Market Street. It seems as if Destin is a beachside version of The Woodlands but larger. We managed to get lost on this small adventure also. We turned out of the second "Market Street" and it immediately put us on a very large toll bridge with no warning and no ability to turn around. So we crossed the bridge paid the $2.50 toll and turned around and paid the $2.50 toll again and drove back across the bridge. Needless to say we now know where that bridge is and will avoid it.

4 days to go.......

Less then 4 days to go until we are Mr. and Mrs. Capps. It's so exciting but we are very busy with preparations and last minute details. We are looking forward to the wedding though, it's going to be so much fun. Then we are headed off to Destin, Florida for 6 days. Once the wedding is over, we will be posting pictures as we get them; along with pictures from Destin.
